Making of enchilada will happen this year at Whole Enchilada Fiesta

LAS CRUCES, N.M. - A Las Cruces tradition kicks off again this weekend.

Event organizers of the Whole Enchilada Fiesta are working on setting up for the festival.

In 2012, the enchilada itself was not prepared at the festival because the kitchen equipment used to make it did not pass inspection.

Inspectors said the equipment was outdated.

Organizers are anticipating a bigger turnout this year.

"I think last year people were expecting to see the enchilada and they were disappointed, so we're hoping that all those people that were disappointed last year or that didn't come for that reason, come back. This year so we're expecting a bigger crowd," said organizer Sonia Saldana.

The 33rd Whole Enchilada Fiesta starts Friday and ends Sunday.

Event-goers can also participate in craft booths, carnival rides, car show, parade, 5K walk/run and headlining entertainment.

Tickets may be purchased at or Pic Quik stores in Las Cruces and Hatch
