Americas High School students learn the ropes of running a restaurant

EL PASO, Texas —

Students at Americas High School put their skills to the test as they ran their own restaurant.

The "Beyond Borders" luncheon was held at the school Tuesday. It allowed faculty and staff to dine in on a warm scallop salad, beef Wellington, and a soufflé l'orange for dessert.

An estimated 20 students in George Rodela's franchising course have been training all semester to put on their seventh student-led restaurant. Each month since September, students have put on two such luncheons, each month offering a different course menu.

"Every month is different. We make plans on how we want it to run, but sometimes it turns out differently," said Anyssa Barbosa, a senior at Americas High School, and a part of Rodela's class. "I've learned how to work with people as a team, and how to work under pressure."

The school's culinary arts teacher, Chef David Dean, prepared the food, while students played the roles of hostess, servers, and managers. The students received their training last school year from a PF Chang's general manager, helping them keep their franchise up and running.

The school is holding their last luncheon for the month on Wednesday.
